The texture of thin flat noodle is fun to eat. Fava Beans sauce made with Clam Dashi is great. This is a great dish while the Fava Beans season last.
Add sea food and vegetables to the stock and flavored with saffron. It is an almost a meal by itself, like Bouillabaisse.
With a family style meal shared with your own family and even with very close friends, there is a second chance to enjoy this Aqua Pazza. Throw anything left in a pan of water and cook a bit.
Take the scales off and clean the inside. Stuff inside opening with Parsley, Thyme and Leaf Celery. Salt and Pepper. Grill the surface with garlic oil, add Shrimps, Clams, Tomatoes and steam cook with wine.
Just add Pasta. Fresh Pasta shines in this dish.
Mussels you buy at any market today are mostly farmed which means they are hung in ropes out in the sea and easy to clean. Clams are also farmed but I still place them in salty water for at least a couple of hours that they will have a chance to spit out any dirt. Continue reading
