This is something similar dish I had in a Thai restaurant. The key ingredient is Salted Plum ( Ume Boshi) and vegetables in this dish are not garnishes but they are good. I suppose you can make this dish with any kind of white meat fish.

A line up of fruits liquors. From left; Kumquat, Lemon, Plum, Apricot. I don’t use wood barrel nor there is a hole, so there is no angele’s share but they are not full any longer.
The most fruits are drained in about 3 months and turned into Jam. From left; Lemon peel marmalade, Mascarpone cheese, Kumquat marmalade, Plum jam, Dolcelatte, Apricot jam with pie pieces. Jam and cheese plate. $7
