We do not have a chance to see a fresh Cashew fruit which is edible. It is a strange looking fruit with two parts of fruit, the cashew apple and the true fruit. The Cashew nut we are familiar with comes from the seed inside of the true fruit. Soak plain, unsalted, Cashew nuts in water or milk first and make paste using a mixer. This paste can be used as a base for sauces or a thickening agent for soups and stews with a lot of flavors. The Portabello Zucchini Salad a few days ago on this site used this sauce.
