Ragu alla bolognese with Eggplant

Best with Fettuccine or short pasta. Eggplant matches so well with meat and tomato and here is a simple recipe.

For two:
1 Eggplant
1/2 Ib. Ground Beef
1/3 Onion
1 Can Diced Tomato
1 clove Garlic
3 T Parmigiano Reggiano
1 T E.V.O.O.
Salt, Pepper

1.Cut Eggplant in small pieces and chop Onion and Garlic
2. Sauté Garlic with Olive Oil, add Beef continue to cook
3. Add Eggplant and cook a little longer, add Tomato and cook for 10 min.
4. Add Parmigiano Reggiano, Salt, Pepper.
5. Mix with Pasta
