It may not be the world’s healthiest, it contains a lot of vitamins and minerals the
body need in hot weather. This creamy soup is simple to make.
1/3 Ib Cooked Garbanzo Beans
1 clove Garlic
1 T Olive Oil
1/2 qt Chicken or Vegetable Broth
1 T Cream
1. Pare Eggplant and cut into small pieces
Slice Onion and Garlic
2. Sauté Onion and Garlic with Olive Oil, add Eggplant and continue to sauté
Add Chicken or Vegetable broth, cooked Garbanzo Beans and continue to cook for 15 min.
3. Once the soup is cooled, Use blender or hand mixer to smooth the soup.
Add Cream, Salt and Pepper. Top with Paprika before serving
