Baba Ganoush, father of pestle. It is a great mashed Eggplant dish for a vegetable dip, for bread or simply a side dish for meat or fish.
For two ~ three:
2 T Sesame paste or Tahini
2 T Lemon Juice
1 T E.V.O.O.
1 clove Garlic
Coriander, Cumin, Cayenne Pepper, Salt
1. Grill Eggplant and peel the skin
2. Mix all ingredients with a blender
