Gratin Eggplant with NagaImo sauce

NagaImo is a type of yam which can be eaten raw and has a unique texture, also know as a nourishing food. Using NagaImo sauce in place of bechamel makes light and easy. It also helps to reduce calories.

For two:
1 Eggplant
2 strips Bacon
1/2 Ib Naga Imo
2 Eggs
1 T Ketchup
Salt, Pepper

1. Chop Eggplant in 1 inch pieces.
2. Saute with Bacon pieces and Eggplant, salt and pepper
3. Pare Naga Imo and grate in a bowl, add eggs, Ketchup, salt and pepper
4. Mix “2” and “3” and place in a baking dish
5. Bake for 20 to 30 min at 400 F oven
