Broiled Tuna shoulder

If there is a shoulder for Tuna, it is a part between the side fins (Pectoral fins) and the head just behind the gills. This is one of the best parts for any large fish. They are usually not available in any American fish market because they are simply thrown away but it is a fatty, sweet meat. Grill it simple with salt is the best. If there is any left over, mix with Mayonnaise and black pepper and place on your favorite crackers, it will make a great canapé
