It comes with Orange color and pale yellow, too, but usually the deep red color which could stain your fingers and cutting board. I prefer to roast the roots in the oven to enhance its flavors and sweetness. The leaves and stalks are great steamed or stir fried. You can pickle them or juice, jams and ice cream are good. I’ve even heard it can make wine, too. It is super healthy with vitamins, minerals and fibers, and it is a fun food to eat.
