Herring Marinade

Herring Marinade is something you want to keep in your refrigerator all the time. It would keep for a couple of weeks one you make one. This Herring and a glass of Chablis will give you a good start for the evening.

For 4~5:
2 Fresh Herring
1 Carrot
1 Purple Onion

Marinade Liquid:
1 C Water
1/2 C Vinegar
1/3 C White Wine
1 T Sugar
1/2 t Salt
1 t Lemon juice

2 Bay leaves
10 Pink Peppers
1 t Fennel seeds

1. Put all marinade ingredients in a pan, boils once and let it cool.
2. Clean Herring and slice into fillet. A dip in vinegar will skin it easier.
3. Sprinkle salt on Herring and leave them in refrigerator for about one hour. Wash salt off with vinegar and cut them into small pieces.
4. Marinade Herring with carrot and onion with marinade liquid and keep them in refrigerator.

You can start eating after a couple of days.
