Pickled fresh ginger

Gari or pickled ginger is gaining popularity at sushi shop. This is a fresh style. Sliced ginger stalk adds color. You can add hot water to make ginger tea.

1/3 Ib Fresh Ginger
1 t Salt
2 t Vinegar
Mineral water

1. Wash ginger well, scrape skin with back of a knife and cut into block pieces.
2. Sprinkle and cover with salt
3. Add vinegar and leave it for 20 min.
4. Add just enough water to cover ginger.
Keep it in refrigerator.
