Pumpkin Salad

Pumpkin is an autumn favorite. Pumpkin is one of those there are so many different species and grown all over the world. Kabocha pumpkin is an Asian Variety of winter squash and has many variety of its own. It is sweet and less moisture than typical American pumpkins.
Some taste like chestnuts. The skin is hard but it is edible and has great flavor you do not want to throw away if you can. It has a full of nutrients such as Beta-carotene, iron, vitamin C, potassium that prepare your body for a cold winter.

Pumpkin Salad:

For 5~6;
1 1/2 Ib Kabocha Pumpkin
1/3 C Dry Cranberry
1 T Sliced or chopped almond
1/3 C Sour Cream
2 T Mayonnaise
2 T chopped Dill
Salt, Pepper

1. Cut Pumpkin to small blocks and steam till you can pierce with folk easily
2. Mix all ingredients

You can use raisins to replace cranberry.
You can use more Mayonnaise if you prefer and use less Sour Cream.
You can use any kind of nuts, like Cashew or Walnuts.
