Quail egg ravioli

UFO has landed.
It was Quail egg ravioli using home made pasta.
A quail egg yolk is nestled on Ricotta cheese on top of spinach.
Ricotta cheese was flavored with lemon zest and orange zest.
Grated Parmigiano reggiano was mixed in boiled spinach.
Cook ravioli only for two minutes to retain soft egg yolk.
Top with Parmeiano Reggiano and E.V.O.O.
This is a great starter or a main dish.
A glass of well chilled chablis would accompany well.
