1/2 Ib Beats leaves
1 stalk Celery
1 clove Garlic
3-1/2 C Chicken broth
1 T E.V.O.O.
1/2 t Salt
Pepper to taste
1.Separate leaves from stalk of beats. Cut stalk in 1/3-inch width. Cut leaves in chunk. Cut Onion and Tomato in 1/3-inch cube. Slice Carrots and Celery thin. Chop Garlic fine. Cut Potato into 1/2-inch cube and keep them in water.
2.Sauté Garlic with E.V.O.O. in a pan, continue to salute with onion, carrots, celery and beats stalk.
3.After vegetable become tender, add potato and tomato, chicken broth and cook for about 40 min. with slow heat.
4.Add beats leaves and cook additional 10 min. Add salt and pepper to taste.
