Don’t throw away those leaves. Stir fried with sesame oil, sake, mirin, soy sauce and Dashi. Pieces of deep fried Tofu add a flavor. This is a good accompany for rice or sake.
Roasted Beets and Arugula Salad with Gorgonzola crumbles. The dressing is a simple E.V.O.O. and lime juice. The sweetness of Beets and salty creamy Gorgonzola cheese matches well and the tartness of Lime juice add a nice touch.
It comes with Orange color and pale yellow, too, but usually the deep red color which could stain your fingers and cutting board. I prefer to roast the roots in the oven to enhance its flavors and sweetness. The leaves and stalks are great steamed or stir fried. Continue reading

Besides typical deep red color beets there are yellow and orange color one. Yellow Beets and Orange Beets are a bit easier to handle, no stains to worry about and are still very sweet with earthy flavor.
