Lightly boiled Asparagus with Gorgonzola bits, roasted nuts, dried cranberries and E.V.O.O. It is super easy and quick but when Asparagus is good, it is a great dish.
It is easy and simple to make pickled vegetables, especially if you keep them for only a few weeks.
It is easy to prepare using Canned Tuna.

Bruschetta brings brightness and everyone’s appetite to the table. Dice Tomatoes in 1/3 inch cubes and place them in a sieve. Mix drained tomatoes with chopped fresh Sweet Basil and place a scoop on a toasted, garlic rubbed slice of baguette. This will kick off a great evening.
Don’t throw away those leaves. Stir fried with sesame oil, sake, mirin, soy sauce and Dashi. Pieces of deep fried Tofu add a flavor. This is a good accompany for rice or sake.
It goes well with a glass of wine, too.

It looks like this. It is known as Horned Melon, Kiwano, Jelly Melon or Melano and native to a region of the Kalahari Desert in Africa. You can eat the seeds and the clear gelatinous part around the seeds. It tastes like green Bananas. It makes an interesting natural sauce for Yogurt or Salad.
